These Peach Brie Grilled Cheese Bites with Prosciutto are the perfect bites that combine the the flavor of creamy brie with the sweetness of fresh peaches. It's topped with salty prosciutto, fresh basil, and a drizzle of balsamic vinegar. These summer hors d'oeuvres are easy to make, visually stunning, and guaranteed seconds from your guests, just like these caramelized onion bites, these radish with butter and anchovy bites, and these mushroom toasts.
Notes on Ingredients and Variations
- Brie cheese: A double or triple cream brie works best for this recipe, as it melts smoothly and has a rich, creamy texture. Alternatively, any other creamy cheese, or cheddar would work well here too.
- Peaches: Choose ripe sweet peaches. They should be firm but give slightly when pressed.
- Bread: I like using a rustic, crusty bread such as a sourdough or a country loaf.
- Prosciutto: I purposely didn't include the slices of prosciutto in the grilled cheese sandwich because I like the contrast in texture. Plus, the added height from each slice creates an elegant and visually appealing appetizer.
- Balsamic Glaze: You can find balsamic glaze in most grocery stores, but if you can’t, you can make your own by reducing balsamic vinegar until it’s thick and syrupy. Alternatively you can also replace this with a drizzle of honey or hot honey.
How to Make These Flavorful Bites
- Cook the Peach Brie Grilled Cheese: Heat a medium skillet over medium heat, add the butter and lay 2 slices of bread. Lay the brie and peach slices on one slice, then cover the sandwich with the other slice. Press the sandwich with a spatula and let it cook 3-4 minutes on each side until golden brown. Remove from skillet and repeat process to make another sandwich.
2. Cut into Bites: Cut each sandwich into 2-inch squares to create perfect bite-sized pieces.
