With the summer months and peach season upon us, it's time to enjoy gatherings outside with fun appetizers. These Peach Brie Bites with Prosciutto are the perfect bites that combine the the flavor of creamy brie with the sweetness of fresh peaches. It's topped with salty prosciutto, fresh basil, and a drizzle of balsamic vinegar.
Cook the Sandwich: Heat a medium skillet over medium heat, add the butter and lay 2 slices of bread. Lay the brie and peach slices on one slice, then cover the sandwich with the other slice. Press the sandwich with a spatula and let it cook 3-4 minutes on each side until golden brown. Remove from skillet and repeat process to make another sandwich.
Cut into Bites: Cut each sandwich into 2-inch squares to create perfect bite-sized pieces.
Assemble the Bites: Gently place half of a prosciutto slice on each piece, then top with some fresh basil. This is optional, but you can use a toothpick or a small skewer to secure them. Right before serving, drizzle a bit of balsamic glaze over the top of each bite. This adds a lovely sweet and tangy flavor that brings everything together. Serve immediately
