These Caramelized Onion and Blue Cheese Puff Pastry Bites make the perfect appetizer bites for hosting a dinner party or enjoying as a gourmet snack. I've made these when hosting a game night gathering, and these small bites were gone so quickly so it's a sure crowd pleaser.
The combination of sweet caramelized onions and tangy blue cheese is so great, you can't just have one bite. I also love the the puff on this bite!

Ingredients
- Caramelized onions: I use yellow onions for this recipe. I know it take a lot of patience to caramelize onions but these are the star of the show! But if you're in a rush, you can always find caramelized onion jam in the grocery stores, which would work well her too. Alternatively, sweet fig jam or fig preserves could pass as well!
- Puff pastry: I like using butter based store-bought puff pastry. Make sure that it's thawed before rolling it out.
- Olive oil and butter: The combination of olive oil and butter helps to evenly caramelize the onions without burning them.
- Balsamic vinegar: Adds a depth of flavor and a slight tang to balance the sweetness of the caramelized onions.
- Blue cheese: Use your favorite blue cheese for a bold and tangy flavor. Gorgonzola cheese is a good option but tangy goat cheese is a good choice too!

How to Make These Bites
- In a large skillet, heat the olive oil and butter over medium-high heat. Add the sliced onions and cook, stirring occasionally with a wooden spoon, until they start to soften, about 10 minutes. Reduce to low heat, and continue to cook the onions, stirring occasionally, until they are golden brown and caramelized, about 30-45 minutes. Then add the balsamic vinegar and scrape the bottom of the pan to get all the brown bits. Season with a pinch of salt and pepper to taste. Set aside to cool slightly.
2. Pre heat oven to 400°F (200°C). Line a baking sheet with parchment paper. On a lightly floured surface, roll out the puff pastry sheet to smooth the edges and slightly thin it out. Cut the puff pastry into 1.5 inch squares and place the small squares on the prepared baking sheet.
3. Brush each square with the beaten egg wash. Bake in the oven for 10-15 min until they're puffed up and golden brown.
4. While the puff pastry is baking, make the hot honey by mixing in the cayenne pepper with the honey.
5. Assemble the bites by placing a small spoonful of balsamic caramelized onions on each puff pastry square. Top with a small pieces of crumbled blue cheese. Top with chopped chives and drizzle with the spicy honey.
What to Serve with this Finger Food
- Wine: A crisp white wine like Sauvignon Blanc or a a nice sparkling wine.
- Other small bites : throw a bites party and serve this with a cheese board, or these radish with butter and anchovy bites and mushroom crostinis.
