Goat cheese and beets go so well together so why not make a dip out of it? This Whipped Goat Cheese and Roasted Beet Dip is so easy to put together and your guests will definitely comment on its beautiful vibrant color I guarantee it! The sweet earthy beets complement the tangy creamy goat cheese and yogurt so well.

Ingredients
- Beets: I like using red beets here because of the pink color it adds to the dip. But you may use golden beets here too. If you don't have the time to roast raw beets for an hour, you could also buy pre cooked beets as well in the grocery store.
- Fresh Herbs: Scallions and parsley is what I use here to top it off but you can use whatever herb you want. Chives, Mint, Basil, are some ideas!
- Nuts: I use pistachios because I love them and because its green color complements the herbs. But feel free to use any nut you like or omit this all together.
- Cheese: If you don't have goat cheese, feta is a good alternative or cream cheese.
- Other toppings: You can get creative here but some ideas can include crumbles of goat's cheese, small chunks of roasted beets, lemon zest, sea salt to name a few.

Instructions
- Preheat oven to 400F. Wrap the beets in aluminum foil and roast for about an hour or until it's tender with a fork. Once cooled, peel the beets and cut into chunks.
- Add all ingredients in a food processor and process until smooth.

- 4 small red beets or 3 medium beets
- 8 oz goat cheese
- ¼ cup plain greek yogurt
- ½ tablespoon maple syrup
- ¼ teaspoon red chili flakes or aleppo pepper
- 1 garlic clove grated
- 2 tablespoons extra virgin olive oil and more for drizzling

Instructions
