Whipped Goat Cheese and Roasted Beet Dip

Goat cheese and beets go so well together so why not make a dip out of it? This Whipped Goat Cheese and Roasted Beet Dip is so easy to put together and your guests will definitely comment on its beautiful vibrant color I guarantee it! The sweet earthy beets complement the tangy creamy goat cheese and yogurt so well.

Equipment

  • 1 Food processor You can use hand mixer here too
  • 1 Microplane

Ingredients

  • 4 small red beets or 3 medium beets
  • 8 oz goat cheese
  • ¼ cup plain greek yogurt
  • ½ tablespoon maple syrup
  • ¼ teaspoon red chili flakes or aleppo pepper
  • 1 garlic clove grated
  • 2 tablespoons extra virgin olive oil and more for drizzling
  • scallions
  • parsley
  • pistachios

Instructions

  • Preheat oven to 400F. Wrap the beets in aluminum foil and roast  in a baking tray for about an hour or until it's tender with a fork. Once cooled, peel the beets and cut into chunks. 
  • Add all ingredients in a food processor and process until smooth.
  • Serve in a dish and top with herbs and pistachios. Drizzle with a little extra virgin olive oil.
