Instructions
Preheat oven to 400F. Wrap the beets in aluminum foil and roast in a baking tray for about an hour or until it's tender with a fork. Once cooled, peel the beets and cut into chunks.
Add all ingredients in a food processor and process until smooth.
Serve in a dish and top with herbs and pistachios. Drizzle with a little extra virgin olive oil.
