How to Make These Radish Bites

1. In a small bowl, combine the softened butter, a pinch of salt, and the chopped chives. Mix with a spatula until the ingredients are combined.

2. Transfer the butter mixture to a piping bag with a large star tip.
3. Arrange the radish slices on a serving platter. Pipe a small amount of the chive butter onto each radish slice. Top each buttered radish with a square of anchovy. Garnish with additional chopped chives and and lemon zest.

Helpful Tips
- If the butter isn't sticking to the radish, chances are the radish slightly moist. Gently pat the radish slice with a paper towel and pipe the butter again.
- Make it vegetarian: for a vegetarian version, omit the anchovies and add a caper instead.
